Spinach and Goat Cheese Crustless Quiche

I love breakfast foods! Anyone else? This is going to be one that you want to eat all by yourself or take to share with others. I love a good quiche and don't get me wrong a pastry bottom is amazing, but not something I can have everyday. 

I typically try to meal prep my breakfasts for the whole week on Monday. I thought, why not add a Quiche to the mix, but to do that, I'm going to need it to be crustless. Today's recipe is Spinach and Goat cheese, but don't worry you could totally add in your own veggie mix and it will still be delicious. 



Spinach and Goat Cheese Crustless Quiche

Ingredients
1 TBLS olive oil
1 tsp salt
1/2 medium yellow onion chopped
1/2 bag fresh spinach
4 oz goat cheese
9 eggs
1/2 cup milk
1/2 cup water
salt and pepper to tast

Directions
1. Preheat your oven to 375. 
2. In a frying pan saute olive oil and onions and salt until onions are translucent. 
3. Add in spinach until wilted down. 
4. While the onions are cooking, whip together the eggs, milk and water and a little more salt and pepper to taste. 
5. Spray the bottom of a 10 inch pie pan with some cooking spray. 
6. Even out the spinach and onion mixture at the bottom of the pie pan. 
7. Pour over the egg mixture. 
8. Crumble the goat cheese and evenly distribute. 
9. Place in the oven for 45 minutes. (make sure your eggs are evenly cooked)
10. Let cool for 10 minutes and enjoy!
I typically cut into 8 pieces and eat 1 1/2 pieces and then put the rest in the fridge and heat up each morning!!!.

{25 Days of Christmas} - Day 4 - Favorite Christmas Goodies



One of my favorite things about the holidays are all the goodies. I know as a health and fitness coach I shouldn't say that, but it's true! Here are some of my favorites.

{25 Days of Christmas} - Day 12 - Friday Favorites

Another week has past and we are glad it's Friday. Only 1 more week until Winter Break and this teacher couldn't be happier. Dreams of sitting by the pool are in sight. 


1//On Saturday Lia and I went over to my brother's house to help back some Christmas Goodies. Lia and Cash entertained each other. They love each other and it is so precious!

2//Frilly Dresses - I haven't bought her too many frilly dresses, but she is a little girl and come on, it is soooo cute!

3//One of my favorite memories with my dad is every morning before school, my brothers and I would lay on my dad on the kitchen floor (we use to have carpet in our kitchen). Now, almost every morning Lia gets to spend time with her grandpa (my dad) it's special to watch. 

4//We got to go visit Great Grandpa in the nursing home this week. He loved her. She didn't know what to think :) 

5//These two melt my heart. You know in the evenings when little ones are tired, but you don't want them to go to sleep yet and they are little fussy (well that happens to Lia anyway), Claudy will take out his guitar and play for her. She loves it! She adores her daddy! It's so funny to watch (especially as a daddy's girl).

{25 Days of Christmas} - Day 7 - Peppermint Mocha


When we lived in Haiti, the closest coffee shop was about 2 hours away and even then, they didn't have very many specialty drinks. I learned to be creative with our coffee drinks, to change it up some and this easy at home Peppermint Mocha is still one of my favorites. 

All you need is coffee (I love a Keurig), and 1 York Peppermint Pattie.


Put the Peppermint Pattie in the bottom of your cup. 



Brew your coffee over the Patty

Give it a little stir and you are good to go!


See - Easy and Delicious, plus it doesn't have near the calories as a peppermint mocha from you favorite coffee shop and you made it at home!!

Strawberry Rhubarb Crisp

It's that time of year in Minnesota...the garden is growing, flowers blooming, people walking, parks filled. I love it! 

There have been a lot of difficult transitions for us, moving back to the US and to Minnesota, but one thing I truly missed about my "homeland" is the summers and the fresh produce from the garden. 

If you are not from the Midwest or haven't visited, you many have never heard of Rhubarb. If you haven't, you are missing it out. It grows back every year, in the "spring" you can cut it back several of times and it will continue to regenerate itself. It looks kind of like "red celery" and has a sour taste. So far this year, we have enjoyed Rhubarb Pie and Rhubarb Muffins...I've heard the Rhubarb Slush is coming (seriously the best punch you will ever drink). 

This week, I decided to try a Strawberry Rhubarb Crisp. Strawberry Rhubarb Pie, is my favorite pie, but I was feeling lazy (and a lack of time) so thought I could try it as a Crisp. It didn't disappoint. (I apologize for the pictures, I'm not a good food blogger). 



Strawberry Rhubarb Crisp
(Adapted from MEFC Cookbook)

3-4c. Rhubarb
3-4c. Strawberries
3 Tbsp. Flour
2 Eggs
Mix together and spread in a greased 9x13 glass dish. 



1 Stick Butter
1/2c.Brown Sugar
1 c. Flour
1 tsp. baking powder
1/2 tsp salt
1 c. Quick Oats
Crumble together atop rhubarb mixture. 



Bake for 45 minutes and serve with cool-whip or ice-cream.

{Saw it, Pinned it, Did it} - FIVE on FRIDAY!! PUMPKIN

Since it's Friday and Fall...my 5 for Friday is all about Pumpkin!!!

If you have followed my blog for any amount of time, you may know that I am a lover of pumpkin, except pumpkin pie. I typically hate baking, but for some reason, when it involves pumpkin, I just have to do it.  
 
 
Today I wanted to share with you some of my favorite pumpkin recipes. Please excuse my photos, a lot of them were taken from my iPhone. 
 
 This turned out delicious and has become my hubbies new favorite thing to eat for breakfast. We ran out the other night so at 9pm I had to start another batch. It is super easy just takes a little while to bake :)
 
 
Recipe: 1 Box Spice Cake, 1 Can Pumpkin.
So easy...To spice it up, I added cream cheese frosting (to half, hubby doesn't like frosting).
 


 
I couldn't find the picture of mine, so picture is also taken from Blog. These are soooo good.

 
4//Pumpkin Spice Lattes
When living in Haiti, I craved these. So I had groups bring me in cans of pumpkin (of course I treated them to PSL's too).  These are super easy.
 
 

 
 
I couldn't find my picture of this one, but it was super easy to make and is such a light cake. Definitely a great treat to share with others.

{Stuffed Peppers}

Ever since I was a little girl, I have loved cooking. When I was younger I would "help" my grandmother cook lunch for all of us. I cleaned a lot from her.
Even when single, I liked to cook myself good meals. Then I got married to a man of a different culture. I no longer knew what to cook :) So every once in a while I try a new recipe to see if he likes it. Last night, I tried stuff peppers. While he doesn't like green peppers, I thought for sure he would like the "stuffing." I was right.
Sorry - I didn't get a picture, but here is the recipe.

2 cups cooked rice
1lb browned hamburger (I always brown with salt, pepper, and onions)
1 can tomato sauce or stewed tomatoes (I made my own)
4 green peppers (or peppers to your liking)
Any other veggies. (I didn't add any)

Brown your hamburger and cook your rice. At the same time boil your peppers for about 5-7 minutes (you don't have to do this, but it requires less oven time).

Mix hamburger, rice, and tomato sauce together. Then put into peppers.

Put in the oven for 15 minutes on 350.

{Saw it. Pinned it. Did it.} - Dilled Pretzel and Crackers

One of my cousins made this last summer...and I loved it. It reminded me of my childhood, when I would make it often. 

Lately I've been craving (not preggo) salty things, so I decided to give it a try!

 I looked on pinterest and found a recipe.. 




I used both Pretzel's and Crackers, but you don't have to do both, you could just use one of these. 

40 ounces of pretzels or crackers
12 ounces OrvilleRedenbacher's popcorn oil
1 oz. Hidden Valley Ranch powder
1 tablespoon garlic powder - ** I thought this was too much and would use half the amount
1 tablespoon dill

Mix oil, ranch powder, garlic powder and dill together in a bowl. Put pretzels in a bag and pour oil mixture in bag and mix together. Let sit overnight.

{Saw it. Pinned it. Did It} - Caramel Pretzel Brownies

I love the mixture of Chocolate and Salty...At the holiday season, one of my favorite drinks is the Salted Mocha or Salted Hot Chocolate. When I saw this pin in my feed, I had to try it. 



It didn't have a recipe, so I decided to switch things up a little bit. 

I first melted butter in the bottom of my 9x13 
Then I smashed a bag of pretzels and put on top of the butter. (You could use a smaller pan, but i would use less pretzels if that is the case). 
I then used one container of Caramel Sauce (If I had to do it over, I would have used a thicker sauce or made my own, but I couldn't find caramels). 
I put on top on brownie mix (you could use two if you want them to have more chocolate)
I then baked for 25 minutes. 


If I had to do it over again. I would make the pretzels into smaller pieces. I would use caramels instead of caramel sauce and try to make it more layery. It was delicious but it didn't look quite how I imagined.

{Friday Favorites} - April 26





1//Date Day: These are my favorite, and we hadn't had one for a while. We went to the grocery store and then to Dominoes. :)

2//There have been 7 puppies wandering around our neighborhood. Claudy wants one. He tried to claim this one... they are still little to be away from mom...but he think he is going to keep it. The name he picked "Black and White" I think it needs a new name!

3//Claudy picked me a flower and took me on a walk! Great afternoon.

4// This week we have a team of teachers from Hershey visiting...looking to partner long term! Yesterday they visited New Horizons.

5//I like to cook and don't typically like to bake, but my husband likes some treats :)

This is BANANA POKE CAKE
* White Cake Mix
* 2 Pkgs, Instant Banana Pudding
* Whipped Topping

Prepare the cake mix as directed. Let cake cool for about 15 minutes. Then poke holes in the cake using the end of a wooden spoon. While cake is cooling, prepare pudding...let sit for about 5 minutes (but don't let it get stiff, it needs to be a little creamer to go through the holes in the cake). Pour pudding over cake and spread evening. Then top with whipped topping!

6//Baby Jeff - Seriously...could he get any cuter?? Please pray for Pastor (Jeff's dad) he fell from a tree a couple of weeks ago and still isn't recovered!

7// Grilled Flat Bread Pizza

* Use Wraps or desired crust of your choice
- Put Olive Oil on Both sides of Wrap. Put on Grill, after the first side is to the Crispness that you desire, flip the crust and add toppings.
* Top with Tomatoes (used a can of rotel)
* Add cheese and fresh Basil

Super good and so quick!

Breakfast Bar

After traveling to Haiti many times in 2 years and then living in Haiti 2 years....I can't eat Granola bars. Seriously, if one had to make there assumptions of what Americans eat, based on seeing them in Haiti for a week, you would be convinced that Americans only eat granola or protein bars....I can't stand them!! (Anymore)

All that to say, I was a little hesitant to try this "awesome" breakfast bar that a visiting team brought with to Haiti. They told me, it was the best bar "granola" bar they had ever tasted it. Hesitantly, I agreed to try them....They were awesome. My husband and I can't stop eating them. I thought I would share the goodness with you! (Remember...this is not my recipe)...




Breakfast bars

1 – 14oz box Honey Bunches of Oats with Almonds
1 – 10oz bag large marshmallows
½ stick butter
2 cups honey roasted peanuts
½ cup sunflower kernels
¼ cup canola oil
1 tbsp vanilla extract
1 bag cranraisins (original or cherry)

In separate bowl, mix cereal, peanuts, kernels, craisins.

Melt marshmallows and butter in large pot over low heat.  Stir regularly.
Add vanilla and canola oil.  Stir well.

Remove from heat and add the dry ingredients.  Stir well working quickly to combine dry ingredients with marshmallow mixture till consistency of rice krispie treats.

Press into 9x13 pan (well coated with canola oil).  Allow to cool.  When completely cool, cut into bars, wrap in saran wrap or baggie to keep fresh.
