{Sweet Potato Hash} - Meal Prep Breakfast

 



This Sweet Potato Hash is the yummiest, savory, breakfast. I make on Monday and eat it each morning for the whole week!


Ingredients

  • 1 green pepper diced
  • 1 med onion diced
  • 3 cups spinach
  • 1lb turkey bacon
  • 3-4 diced sweet potatoes
  • Olive oil (or avocado oil)
  • Eggs (optional)
Directions

1. Dice Sweet Potatoes. Roast on 450 for about 12 min. 
2. While sweet potatoes are roasting, fry bacon, set aside.
3. Put 1 Tbls Olive Oil in the pain. Saute onions and peppers. When onions are translucent, add in spinach and salt and pepper. 
4. When sweet potatoes are tender, add to your saute pan and add bacon back in, to blend the flavors.
5. 1 serve with 1 fried egg, but that is optional.

Instant Pot Chicken Tortellini Soup



My very first recipe creation and I couldn't be prouder. It's super easy and quick to make, plus yummy on these cool fall days! 

Healthier Creamy Chicken Tortellini Soup

Ingredients
1 TBLS olive olive
1 yellow onion (peeled and chopped)
1 green pepper, seeded and chopped
1 cup diced carrots
2 cloves garlic
2 large chicken breasts (raw or frozen)
2 garlic cloves, minced
4 cups chicken broth
8.8 ounce tortelinni pasta
1/2 cup milk (if you want it creamier use half and half)
1/2 cup parmesan cheese
2 Tablesppons packed frozen spinach
1 TBLS chopped parsley
1 tsp dried thyme leaves
1/2 tsp crushed red pepper (you can leave this out if you don't like spice)
salt and pepper

Instructions
Turn your instant pot on the saute function, on the highest setting. heat the oil in the bottom of the pot. Add in diced onion and stir for a couple of minutes. Add in the carrots and green pepper and stir for 2 more minutes. Add in the garlci and stir until the onions are transclucent.

Add in the parsley, thyme and red pepper, chicken broth, salt, pepper and chicken. Give a quick stir. Cover the Instant Pot and secure the lid. Make sure the valve is set to "selling." Press the manual pressure cook button and set the time to (10 minutes if raw or 15 minutes if frozen) on high pressure. Once the timer beeps, let out the pressure by gentely moving the valve to "venting."


Spoon the chicken out and place it on a cutting board. Cut the chicken into bit size piece and then add it back in the pot. Stir in the tortellini, spinach, Parmesan Cheese and milk. Turn the IP to saute to heat up the tortellini. Once the tortellini is warmed through, ladle the soup into bowls and serve. (about 10 minutes)

{September Goals}


Well, July & August came and went. Work was super busy and I tried to make every effort to live in the moment and enjoy our "summer". Because of that, the blog suffered! I'm back this month, and what better way to start then my monthly goals! I just had to use the fall pic of Lia from last year! Look how little she was...

Here we go with those goals!

1. Work trip to Florida
2. 100 of 1000 gifts
3. Help 5 - 7 more people reach their health and fitness goals
4.  Build my Beachbody Team
5. Attend a football game - I love football!!!
6. Take a family picture - Seriouslly we have like 2 total and they are selfies :(
7. Read 1 non-fiction and 1 fiction book
8. Another Round of 21 Day Fix - Want to do it with me? 
9. No spend September - Only spend money on the necessities. This is hard for me, I love shopping in the fall (reminding myself that we wear these clothes for 6 months)
10. Participate in Bible Study
11. Get Lia to sleep through the night  - Help this mommy needs sleep!!
 12. One date night before Harvest
13. Friday Favorites blog every week.

{Friday Favorites} - October 31




Happy Halloween! Happy Friday! Is it Sunday yet? I'm ready to relax. Maybe sit a little :) So much has been going on this week, I feel like I've been going non-stop. I shouldn't complain because compared to all those farmers, I've not had it too bad :)

With everything going on, I kind-of slacked on picture taking, but here we go!

1. Claudy has been working on the farms during the weekends. On Saturday, Kalee and my mom were out of town, so I cooked all of the guys burgers. Bonus, Lia and I got to ride with Claudy in the truck!

2. When Claudy gets home from school, he helps with Lia, I came downstairs to this. It's no wonder she giggles at daddy more than me, he is way more fun!

3. Happy Halloween - No costume this year, but we have a Halloween onesie! Hopefully, we will pass out some candy and then go to the towns festivities with Kalee and the kiddo's.

4. FitFabFun - For all of you that are wondering what that is....I'm now a beachbody coach and that is the team I'm part of! I'm so excited to see what is in store. :)

5. Rolling Over - I took about 10 pictures this morning, because little one is rolling over and wouldn't stay still! She kind of as a little smirk on her face in this picture! I guess she showed me :)

{Friday Favorites} - October 24


Another week has gone by. This week sure went by fast, but I'm sure ready for the weekend! It's almost here.

1. Lia hated her infant car seat...Like she screamed the minute she went in it. We upgraded her to a rear facing convertible! So far, she only cried for 10 minutes on my trip to the cities and back!



2. My sister-in-law wanted me to catch some pictures of her kids this weekend with the gorgeous  weather and fall colors. We weren't totally unsuccessful..Here is one of Cash and Lia...he loves her. It's so fun!



3. Did I mention we have had a beautiful fall weather wise. I snapped this on our run last night...Notice I have a tank top on...at the end of October :)



4. Leaves - It's my favorite smelling candle! Love burning it!



5. I woke up to this :) How precious. We don't have her in our bed very often (this is probably the first time in 3 weeks), but she woke up at 5:30 so we brought her in with us!! I guess she fell back asleep!

{Friday Favorites} - October 17

This has been our evenings this week. ROUGH!! Lia has decided she doesn't like naps or only needs 30 minutes at a time...So by 7pm, she is exhausted :)

Dad is doing school and helping with harvest some...that means little girl works late with mom!! Doesn't she look thrilled :)

Lia is 3 months already! So hard to believe!

Last weekend my mom and I took my niece and nephews to the park. It was a gorgeous evening and I found the perfect light to take pictures of our little girl!

No pictures for this one!! But STROLLER MOMMAS. I've been doing a fitness class at our local gym. It's a group of moms, with our kiddos in their strollers. My abs and legs got a killer workout today! Lovin' it!

October Goals



Another month has passed. It's hard to believe that fall is in full swing and harvest is starting. 
I love fall! I love getting out my mittens, my scarves, great smelling candles, the changing of colors, and football! 

It's time again for Monthly Goals. Here is how I did in September.

September's Goals
1. Take at least 10 - 15 minutes every day to spend in the word (I know this isn't a lot of time and would love for it to be more). I did pretty good on this, but I missed a couple of days.
2. Exercise 30 minutes - 5 days a week. I'm learning that even though it seems selfish, I need this 30 minutes!
3. Get ready everyday (I know I work from home, but I think this is important). 
4. Go on at least one date night with my hubby without baby girl. Failed....no date nights.
5. Social media free weekends. Failed again...I really did try, but couldn't stay away.
6. Read one fiction book and one non-fiction book Done, thanks to a work trip!
7. Blog at least 4 times (I would love to get to a couple of times a week, but we will start small). I'm not sure how I did this, but we did. 
October Goals
1. Bake - I love cooking with Pumpkin, so I'm hoping to bake some fall goodies. 
2. Date Night - We are going to try this one again. 
3. Take more pictures (With my good camera) - Y'all I feel like I am failing little girl, I've hardly taken pictures of the girl with our good camera
4. Make some videos to send my students. 
5. Read a book - It's on again, because it's good for my mind :)

{Friday Favorites} - September 19

It's been a long time since I've done Friday Favorites. I decided to try to bring it back. We'll see how it goes. It seems like we don't do much and All of my Friday Favorites may be about Lia, but that's a good thing right?



1. Her smile is contagious. She is starting to smile more and more purposefully now. The other night, she went to bed a little late, so I brought her into our room. She loves laying in our bed...and we don't mind it at all.

2. Little girl is so strong. If you have her laying in your lap or laying down in anyway, she tries to sit up. I decided to try to put her in the Bumbo Chair. She loved it and had that concentrated look on her face the whole time. She lasted about 10 minutes before she got tired.

3. Red Band Society - I am so excited fall shows are back (I've missed my favorites). I watched the pilot to this new one on Fox the other night. I'm hoping the rest of the episodes will be as good as the first! Can't wait. 

4. Fall is in the are here in Minnesota. I love fall scents..The Leaves candle from Bath and Body is my favorite. It's been burning in our house for the last couple of weeks.

5. I had my first fall coffee drink, the other day...No it wasn't a PSL...but a Salted Caramel Mocha....Love it!

{Blog-tember} Seasons - September Goals



Those of you that have been friends with me for a while know that I love seasons. I love to enjoy what each one has to offer (okay, I struggle with winter). As much as I love summer and hate to see it go, there some equally great things about Fall!! So today, I welcome fall. New home decor is up, the fall scents are in the burners and new fall candles are out, football has started, the mornings are getting cooler, I've been seeing lots of Pinterest outfit pictures of sweaters and boots and back to school pictures have filled my Newsfeed today. I'm excited for what this next season brings. 

I love my job and definitely wouldn't trade it for anything, but seeing all of those back to school pictures, makes me miss the first day of school. I miss the excitement, the buzz in the hallways, the smell of new school supplies (I got to buy my hubby school supplies, so that helps), new outfits, and friends reuniting. 

Another "season" starts for me next week. This week marks the last week of maternity leave. While, I work at home and for now am not taking her to day care, our time together will change. I will have to learn how to find balance again. 

I never done monthly goals before, but felt that with this new change in life, it may be good to set some monthly goals. So....

September Goals

{Saw it, Pinned it, Did it} - FIVE on FRIDAY!! PUMPKIN

Since it's Friday and Fall...my 5 for Friday is all about Pumpkin!!!

If you have followed my blog for any amount of time, you may know that I am a lover of pumpkin, except pumpkin pie. I typically hate baking, but for some reason, when it involves pumpkin, I just have to do it.  
 
 
Today I wanted to share with you some of my favorite pumpkin recipes. Please excuse my photos, a lot of them were taken from my iPhone. 
 
 This turned out delicious and has become my hubbies new favorite thing to eat for breakfast. We ran out the other night so at 9pm I had to start another batch. It is super easy just takes a little while to bake :)
 
 
Recipe: 1 Box Spice Cake, 1 Can Pumpkin.
So easy...To spice it up, I added cream cheese frosting (to half, hubby doesn't like frosting).
 


 
I couldn't find the picture of mine, so picture is also taken from Blog. These are soooo good.

 
4//Pumpkin Spice Lattes
When living in Haiti, I craved these. So I had groups bring me in cans of pumpkin (of course I treated them to PSL's too).  These are super easy.
 
 

 
 
I couldn't find my picture of this one, but it was super easy to make and is such a light cake. Definitely a great treat to share with others.
